Pistachios first came to California in the mid 19th century, but it wasn't until the mid-late 20th century that the industry grew to commercial scale. Botanist William E. Whitehouse only deemed one variety, Kerman, to have substantial promise after testing several varieties he procured from Persia (modern day Iran). The arid and warm growing conditions, similar to the nut's origin, allowed the Californian industry to grow into the largest producer of pistachios worldwide.
Our pistachios are grown organically in Santa Barbara, where the high altitude and dry climate mimic the environment in the Middle East. To create the decadence deserving of the pistachio, we add unrefined panela sugar, enhancing its silky smooth texture and creating a subtle sweetness.
We craft all of our nut butters in small batches from the finest ingredients:
